from Farmer John’s The Real Dirt on Vegetables

2 med summer squash, coarsely grated                             2 tsp salt

1 cup sour cream                                                                     2 Tbsp onion, finely chopped

1 Tbsp lime juice, freshly squeezed                                     1 tsp cumin seeds or ½ tsp ground cumin

fresh ground black pepper and paprika

Place squash in medium bowl; add salt and mix well. Transfer to a colander and se6t in the sink to drain for at least 15 minutes, up to 30. Meanwhile, put sour cream, onion, lime juice and cumin in a large serving bowl stir until well combined. Season w/pepper and paprika to taste.

Squeeze as much moisture as you can from the squash with your hands; add squash to the sour cream mixture. Stir until thoroughly combined. Cover and refrigerate for at least 2 hours. Serve cold or at room temperature.
