it probably should be called Bulgar Salad, but I like Tabouli better

6 cups cooked bulgur wheat or quinoa                        1/2 – 1 cup chopped parsley

1/3 – 1/2 cup olive oil                                                      juice of 1/2 lemon

salt to taste                                                                        dash rice wine vinegar

Mix all together. That’s the basic foundation. Now, add any of the following in whatever proportion seems right:

*Cucumbers, chopped                              *Feta cheese (actually quite important)

*Fresh or dried mint                                 *Fresh tomatoes, chopped

*Toasted tamari sunflower seeds           *Olives, chopped

*Marinated artichoke hearts                   *Scallions or raw red onions, chopped

*Carmelized carrots and or fennel
