- Substitute fennel for celery in most any recipe

- Use raw as part of an antipasto platter for dessert along with a soft goat cheese

- Add to soups, purred or chopped; slices can be sautéed first to lock in flavors

- Use raw slices for dipping in dressing or high quality olive oil seasoned with S&P

- Steam and chill along with other vegetables; dress with spoonful of lemon juice, olive oil, chopped

green onions (or the tops of the bunching onions) and S&P

- Sauté with artichoke hearts, zucchini, tomatoes, sweet bell pepper, thyme and S&P

- Use the feathery leaves as fresh herb; use as substitute for dill. It’s excellent on baked or broiled fish

with butter and lemon.
