Kuku Sabzi is a traditional Persian New Year’s holiday dish. (The Iranian New Year is the first day of Spring.) The green color is supposed to symbolize prosperity and happiness in the coming year. Each household has its own recipe, but all contain eggs, greens, and herbs.
6 to 8 eggs
1/2 pound tender greens, such as spinach, chard, or beet leaves
1/2 pound mixed green herbs (preferably fresh) such as cilantro, parsley, dill, mint, fenugreek, etc.
2 bunches scallions or chives
4 oz walnut meats (optional)
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup melted butter or olive oil or a mixture of the two
Plain yogurt for garnish (optional)
Grease a 9 x 13-inch baking pan. Preheat oven to 350 F for a metal pan, 330 F for a glass or ceramic pan.
In a large bowl, beat eggs and stir in salt, pepper, and butter or oil.
Finely chop greens and herbs. Chop walnut meats to preferred size. Add greens, herbs, and nuts to egg mixture and mix well. Pour into baking pan and bake until solid and just starting to brown, 45 to 60 minutes. Allow pan to cool on a rack, and cut kuku sabzi into squares for serving.
This dish is especially good garnished with a plain yogurt.
