Put all your spinach in a big bowl, squeeze a half lemon, add ~½ cup olive oil and ~1 cup fresh grated parmesan cheese. Toss all together. That’s it and it’s absolutely delicious! Variations include topping with fresh ground black pepper, tamari roasted sunflower seeds, hard-boiled eggs. Or lightly steamed fresh peas or finely minced fresh garlic.
