Green Tomato Nacho Bean Dip

2 Tbsp vegetable oil

1 medium onion, diced

2 green tomatoes, diced

2 cups cooked red or pinto beans

1½ cups your favorite taco sauce

S&P to taste

1½ cups shredded cheddar cheese

In a large frying pan, heat 2 Tbsp oil and sauté onion until translucent. Add green tomatoes and cook for 5 minutes. Add beans, 1 cup taco sauce and S&P. Continue cooking for 15 minutes. Mash some beans with back of a spoon to make mixture look pasty. Transfer mixture to a shallow baking dish. Sprinkle cheese and remaining ½ cup taco sauce on top. Broil 5 minutes or until cheese is bubbly. Serve with corn chips.
